About Toshimori Sake Brewery
The brewery owns their own paddy rice field for growing Omachi rice, which is the oldest kind of sake rice, the ancestor of the well-known Yamadanishiki. Omachi is a rice breed which is difficult to grow, and once it was extincted from the market. The present owner Tadayoshi Toshimori revived the growing of Omachi by using the fertile soil and clean water in the Karube region of Okayama in the 1960's and no chemical pesticides is used.
