The brewery has over two centuries of history - but they switched from Toji (chief wine brewer) to "brew sake from all employees" system in 2016.
All products are premium and has to be stored in -5c condition. They use modern technology (e.g. remote temperature management system & sophistacated
hear calculation system) so as to standardize the process and making it replicable.
